Coconut Crunch Parfait
We recently had some friends over for dinner, which is always lovely; however, we were informed a few days before that they are now gluten, dairy and sugar free (oh and no red meat!). No problem, we really love to have them over so I hit the recipe books and found a whole host of fab recipes. In the end we had Lemon and Herb Chicken with a Cumin Roasted Carrot & Coriander Salad (which was delishimo) and Roasted Sweet Potatoes. Followed by this little lovely - which as well as a dessert would make a great breakfast.
It is super simple and rather lush.
Ingredients:
Gluten Free Granola
300g Fresh Berries (or Fresh Fruit of choice, or frozen berry mix)
1 tin Coconut Milk (whisked to yogurt consistency)
Method:
Assemble ingredients in layers in a parfait glass and serve chilled.
See, I told you it was easy!! I used The Paleo Foods Co. Honey & Pecan Granola; but you can easily make your own with gluten free oats.
